Cloud Bread - low-carb and gluten free.

I am going to have a go at making this, using whole milk cottage cheese, a slightly lower fat option than cream cheese. Has anyone tried a recipe?
www.itv.com/thismorning/food/cloud-bread-lisa-faulkner-recipe. Apparently freshly baked the 'rolls' are crisp, if cooled and stored in container they are more like soft bread.

Delicious, as long as you don't expect it to be like bread. I sprinkled some Parmesan before baking.

Looking at the ingredients, I guess it would be a bit like a baked omelette! Good idea though.

DH has just discovered GI which is doing wonders for his diabetes. The lack of bread is a bit of a downer though so I shall certainly try these.
