type 2 diabetes and vegetarian

I'm diabetic and vegetarian. I'm trying to embrace the low-carb high protein diet ideas. I'm also a pensioner on a fixed income.

I'd love to hear from others in the same situation. Most of the vegetarian meals in my local supermarket need to be oven-baked, and I do prefer to be able to use my microwave if possible.

I'm not an absolutely strict 'NEVER' vegetarian; I try to eat oily fish at least once a week. Chicken occasionally, but I find the quorn version perfectly acceptable. Eggs and cheese are staples.

I have a Nutribullet and use it once a day if I can, putting in a green vegetable such as broccoli, beetroot, yoghurt, a small banana, avocado, some turmeric, maybe green tea, a few nuts and seeds. That way I feel I am getting a lot of my daily needs in one large glassful.

I'm not one for spending hours in my very small kitchen preparing meals for myself. Perhaps that will have to change!

I'd love to hear from others in a similar situation.
