Cavalo Nero

It looks as though it will be going to the GC's guinea pigs.
It looks too healthy for us.

Just do the same as you would with ordinary kale!
I slice the leaves thinly, fry off a few bacon lardons until crispy, then stir fry the Cavolo Nero in the bacon fat, adding a bit of butter if necessary!

I bought some for the first time last week. I did as Juggernaut suggests. It was quite tasty, but the remainder of the pack is still sitting in my fridge. Next door have guinea pigs!

Cut out the thick stalk in the middle. Cut the leaves up and boil in water for a few minutes until it wilts. Drain and add butter and fresh ground black pepper. Delicious served with lamb.

Cut out the thick stalk in the middle. Blanch. Make meatballs out of beef or lamb mince. Wrap them in the blanched leaves. Put them in a pot (or slow cooker) open side of the leaves down. Tuck onion quartered (or whole shallots), whole carrots cut in half, chunks of peeled potato plus any leftover leaves rolled up wherever you can find a space. Add 500ml stock plus a splash of wine. Season and cover and cook till the carrots are tender. My family love this dish (any cabbage leaves will do). It is even tastier the day after.

Just cabbage with pretensions.

It's 'black kale' - a very dark green variety, with straight leaves rather than the more common curly kale.

Thanks to all who replied. We have just had it and it was very nice. I did it to "Anya" s method as we were having it with a roast dinner. I wouldn't replace my favourite Savoy cabbage but will have it again.
I feel so healthy, just forget the red wine.

Very popular in Italy and an essential ingredient in Ribollita.

Just to say you need a very large bag for 3. Like spinach a lot goes a little way☺
