For inspiration - what is for dinner tonight?

A fair while ago we had a long running thread about what we were having for dinner. I found it a good source of ideas and thought I'd try to resurrect it - it's for Tizliz too!!

Tonight's dinner doesn't really qualify for the name but I'm on the school run tonight in Derby, so fit for nothing when I get home apart from wine

We are having M&S gf fishcakes, gf oven chips and frozen peas! I'll do better tomorrow. blush

Tonight we are having potato croquettes (Tescos), sea bass and steamed asparagus. Yummy!

Thanks for the penne suggestions, all.

Thanks to river I have bought a "half-jack" of vodka and have vodka in the house for the first time in decades grin - am gonna go with that sauce recipe.

I'm also in the midst of baking a tea loaf ... smile made with Earl Grey tea.

Steak pie and mashed potato. Might open a tin of baked beans with it.
A stick-to-your-ribs dinner.

It couldn't be easier, I just soften butter a little then beat in a large dollop of sweet chilli sauce, add some chopped herbs if I have any, today I've got some lemon thyme so that will go in too.
Then shape roughly and chill back in the fridge till needed.
You could do similar with mayonnaise.

Peppers Romanesco (peppers halved, filled with pesto, cherry tomatoes and a smidge of garlic, roasted in the oven), quick and easy to assemble, pasta with parmesan and butter and broad beans, followed by stewed plums (the last of last year's crop)

Just about to make Lamb Italienne with some chops I got from the Co-op this morning.
Cooked very slowly with onion, carrot, celery, tomatoes and herbs & served with baked potatoes and courgettes. There'll be enough to freeze two portions for another day.
Followed by Apple Charlotte made with some left over bread.

Some thinly sliced lambs liver with colcannon mash and onion gravy and some strawberries bought on offer yesterday and must be used by to-day I think a spot of ice cream will go down well with it too.

We're having the beef stew I cooked yesterday just got to add potatoes and dumplings later... Its mostly vegs with just a few ounces of beef for flavour..
Because I've been trying to cut out as much salt as possible I now find ready made sauces too salty , OH loves a cottage pie ready meal now and then and I had a taste and I couldn't even eat it because of the salt, why do they do that?

I misread that at first Galen. I want inspiration for some thin pork steaks bought by DH . I did like standing over a frying pan and then serving up feeling as though I'm smelling of fried food.

Tonight it will be fresh haddock pieces, which DH likes cooked in a frying pan with milk, parsley and a dab of butter ( quick and easy too) with some mash and cauliflower cheese ( from Sainsbury)

annsixty I find that they are too much for one but insufficient for two. I may try another as I was not too taken with the curry dish I chose.

Tesco have a lovely range of frozen vegetables now. Also frozen avocado which you can slice and eat with a salad. Try their basic olives in a plastic container. All useful things if you haven't much strength or in a hurry. I used to buy diced swede from Iceland for stews and casseroles but they have stopped selling it. They still do have frozen baby carrots which are useful. All these can go into a casserole and you can have a sit down and glass of Pinot or something else.

I have an ongoing fling with Lloyd Grossman sauces (buy on offer £1). DH likes the tomato and red wine one. Makes easy pasta sauces or in oven with chicken, olives etc. All things which help to keep our old bodies going. Another thing I have taken to recently is boneless and skinless chicken thighs from sainsburys. No waste. You can serve this to visitors without having bones all over the place. The flavour is better than chickens breast.
