Meatless Mondays

OH and I are trying to have one day a week meat/fish free. We've had stuffed peppers, Moroccan style couscous, veggy Bolognese, butter bean stew but I'm already running out of ideas. Any suggestions please? I do have Delia's vegetarian cookbook so might have to dig that out......

I also need help. I tried a recipe for aubergine and garlic lasagne. It was awful!

Maybe have a stir fry of vegetables? I particularly like a curry flavour and it is one way of getting rid of pieces of vegetable sitting in the fridge. I usually have it with rice.

Baked bean (or vegatable) lasagna.
Pasta bake with veg.

We have one or two meat free meals a week.

DH does a mean Spanish omelette, also a good Carluccio one with ricotta & mint. There's also mushroom risotto, and we have a lot of goats cheese salad in this warm weather.

He will eat fish but if he has neither he thinks he's being deprive

I always have some veggy sausages/nut loaves/crispbakes in the freezer as standbys. DiL is vegetarian so if they drop in at mealtime I can always give her a choice. If it's a prearranged meal I'll do something from scratch for her, often something we'll all eat.

chelseababy what about cauliflower or broccoli cheese with some nice bread?

We eat meat once a week. There are plenty of ideas for the rest of the week. My mainstays are quiche, risotto and stir-fries. And pasta, of course, with all sorts of mushroom or cheese creations. My big problem is that DH can't eat tomatoes.

Nut roasts, lentil bakes, cheese soufflés, savoury pancakes, sphag bog made with quorn mince, mushroom stroganoff.

I agree about lentil bakes, I often make that.
Another idea is veg. crumble. Cook the veg with a creamy sauce and top with a crumble of bread crumbs nuts and a little oil.
Also veg. soufflées, made from almost any veg.
Sweet and sour veg. (fried in batter) S&S sauce and rice.

Growing up we never had a meatless Monday as we always had the meat that was left over from the Sunday roast.

Same here, Mumsy. Quite often it lasted til Tuesday as well.
Fortunately vegetarians don't really have left overs.

google vegi recipes, there are loads on line and it means you don't have to go out and buy cookery books. We eat meat about 3 times a week, fish twice and everything else is vegi. I started 35 years ago when oldest daughter was a 13 year old who decided to be a vegi. Our three have all had a vegan/vegi phase, I don't mean to be dismissive of those who follow vegi/vegan diets because I think they're the way to eat. Our adult children now all eat varied diets but none of them eat meat every day. When they left home they could all cook excellent vegi spag bog/pasta bake/vegi soups and curries. Keep going chelseababy, you'll discover a world of really good food out there that doesn't need meat.
