Where did the cheese go???

Evening all,

We seem to be eating a lot of chicken lately, and I have done things like putting a quality pork chipolata on top of chicken breast,wrapping it in bacon,(with a couple of fresh sage leaves tucked under) then bunging it in a dish and roasting it. It has worked really well!

So tonight, to go with new potatoes and salad, I bunged a slice of cheese on each breast, (chicken, not mine!) then wrapped the bacon round etc, but when we came to eat, of the cheese there was no sign! confused

But I bet the calories from that slice of cheese went into you, visible or not.

I do a nice thing with nectarine slices in a slot in a chicken breast and goats cheese on top, roasted. The cheese and the juices from the fruit melt and spread around the chicken.

DS does something with that garlicky French cheese in a slot in the chicken, then wrapped in bacon or pancetta.

Chicken breasts marinaded in honey and balsamic vinegar is lovely especially served with mash and broccoli.

Cheese has a high fat content and when the chicken cooked this would have liquidized and become part of the pan juices. The remaining solid matter would still be there but may have caramelised, because of the lactose content, and formed part of the 'crust between bacon and chicken.

The cheese is still there, but not in a form you would recognise.
