Batch cook. DD has been catering for one for 20 years. She will make a bolognaise sauce or any other dish using a pound of meat then eat one portion and put the rest in small individual plastic containers in the freezer to be eaten over the next three months or so.
Fresh vegetables can be prepared then frozen for a month or so without blanching. Spread things like sausages on a tray to freeze then when frozen bag them and you can just get out one or two at a time. Freeze bacon with polytish between rashers and again you can peel off a rasher at a time. Bread, loaves or rolls can be frozen and used up a slice at a time. A slic of bread defrosts very quickly and most toasters have a 'toast from frozen' button.
Your biggest friend in your situation is your freezer. Freeze anything once. If it is a disaster do not do it again, if it works out, keep freezing.
