If you can find your Mother's recipe NotTooOld, would love to see it. Going to try out several this year to compare plus the Derbyshire Thor Cake above.

My Yorkshire mother always made parkin for Firework Night. I think I may even have her recipe somewhere........hmm

Cinder toffee's lovely, melts in the mouth. Also known as honeycomb toffee.

Not keen on parkin, sticks to your teeth!

No, not cinder toffee, I remember it being rather like treacle toffee.

We used to have Parkin round about Bonfire Night, along with Plot Toffee.smile yum.

Thank you grannyactivist, I am going to enjoy trying out these new receipes. Interesting that the Parking recipe suggests it can be used as a basis for triffle!

I'm envious Hilltop! I used to love walking in Dovedale and the Manifold Valley in my younger days.

Thanks Jane, I will definitely give this a try for DH and his Friday walking friends, they like a change of cake with the seasons! Reading the comments from people who have made it, seems like the removal of flour makes it more moist.

It is really interesting that it is called Thor's Cake, DH and friends walk in Derbyshire every Friday, and Thor's Cave is in the heart of the Peak District in the Manifold Valley.

I used to love Parkin too, from the local shop, and never found a recipe that came near it.
Recently though I went walking for a few days with old school friends and one of them made this cake, which is very like Parkin and quite delicious. If you follow the link there's quite a lot of waffle but the recipe is there at the end!

Does anyone else still make Parkin at this time of year? I use a Delia receipe, but substitute Rye flour as I can not eat wheat.

Would love a real Yorkshire recripe, and to know how long to store before eating to get a really moist cake.
