I've made a birthday/Christmas cake for my daughters 50th (on Christmas Day!!) - a '5' and a '0', it's now marzipanned and today I intend to ice it. I'm going to make Royal icing (which I've done many times before) but often find that eventually the icing is rock hard so I'm wondering whether to add a bit of glycerin as well as lemon juice???

Glycerine is certainly what you need to keep the icing soft, but I'm not sure whether you should put lemon juice in it because I always thought lemon juice hardened it up, but don't take my word for that - I'm sure someone on here will know one way or the other.

Perhaps Google it?

I always add glycerin. It does make the icing less hard.

A drop of oil? (Corn oil, not machine oil)
