Egg wash

When you've brushed the pastry with beaten egg what do you do with the rest?
DH has bought extra large eggs this week and it seems a lot of surplus to throw away. He usually buys mixed eggs and I pick the smallest. Doi put it in the fridge and wait for it to go horrid? Any clever ideas please.

I often add it to another egg for an omelette for lunch the next day or add it to a bit of cooked rice for egg fried rice also for lunch the next day.

I do all the above but also add it to pasta, with some bits of bacon for a quick carbonara.

Freeze it and add to cake recipes as required, or pancakes or yorkshires.

I often use beaten egg in the pastry itself (if it's shortcrust pastry), saving a little bit for the glaze. Job done!

I don't usually bother with an egg wash (unless I am making something else at the same time which I know it can be used in) just use a bit of milk. The family aren't fussed about having shiny brown pastry. If I was doing some for something special I would use excess in scrambled egg or omelette.

I put it in the microwave for 30 seconds, let it go cold and mix it in with the dog's dry food to give him a wee extra treat.

Not much good to those who don't have a dog grin.
