Green butter cream

I have to pipe some buttercream grass onto my grandson's birthday cake and I had a trial run today at colouring some butter cream. I bought some green gel food colour from Morrisons - their own brand - and ended up using practically a whole tube to get a result that was nothing better than a khaki colour; nothing like green. And the more I added, the less likely it seemed that I would be able to pipe it. I have used their gel colours before and they are usually pretty good. I took it back. So I thought I would try mixing blue and yellow liquid food colour and ended up with a sort of peppermint green. Adding more of one colour or the other doesn't seem to be doing the trick. Has anyone made any grass green buttercream? Or are there any other suggestions out there (other than "go out and buy a cake" - I wish I'd done that to start with!). I have less than a week to get this sorted and I would appreciate any help!

The supermarket colours are rubbish. You need gel colours. They come in little pots & are very very concentrated. Cost about £3. Try a cake decorating shop or something similar. You can order them off eBay but not sure if it will arrive in time.

Hello Greyduster, I made a hedgehog cake recently for my granddaughter, she wanted it sitting on grass!! So I bought some green ready to roll fondant icing, spread Ono a cake board, then I used a fork to rough it up to look like grass, it looked quite effective,

I'm a bit lazy and would have used green sugar with green coconut patted down slightly. But your cake was much nicer.

The grass nozzle worked well really, but the problem I found with coloured butter cream is if you have a lot to do, the heat from your hands can 'curdle' the buttercream eventually. The fat starts to separate out a bit. I can see the sense in putting green fondant through a garlic press, but I'm not sure how you would make it stick to the cake. I did put a layer of green fondant on the cake before I started decorating it, and attached the tiles with edible glue. I think, with hindsight, I should have put a layer of glue round the edge before piping the grass, because although it stayed on, just, as soon as we cut into the cake, it fell off in chunks. But by that time it didn't matter anyway. I hope it will be a long time before I have to worry about it again!

Try a thin layer of white icing as "glue" then sprinkle liberally with sugar which has been coloured green. When I used to decorate cakes, I would always add yellow to the green colour to make it more "grassy". Colour the sugar, then spread it out on waxed paper to dry in a warm place before use. Green fondant icing , softened and pushed through a garlic press or tea strainer ,
I have some here and would happily post it to you tomorrow if you can't buy any in your local supermarket.

Try using Sugarflair gel paste. They do different greens. Try Holly green for a darker shade. Can be mixed with other greens. Always works for me!

Fabulous cake and finished during the day. I completed my grandson's Lightning McQueen cake at 3.30 am on the day of the party after three trial runs and sustained by chunks of vaguely car shaped rejects.

shysal the resulting 'grass' is very fragile - not sure how much of it will still be on there when DH has driven ius six miles over some of the most potholed roads in the country! I am past caring now grin!

Well that's that done. A very small amount of Progel professional cake colour, leaf green. Exactly the right colour. Here is the offending article, coming to this forum for one night only! Many thanks for all your suggestions - they were very welcome.

I have remembered that DGS's cake was covered in chocolate buttercream and then DD used the green-coloured coconut in certain areas on it. (a minecraft cake)

This has me worried now, as I need green butter icing for DGS cake this weekend.
Then again the state of our garden just now(theme of cake) it could just be mud !!!!
I am doing little trees and bushes from Broccoli(no shortage here) and Romanescue, dipping some of them in different coloured water icing and using carrot batons for the edging round the grass.

There are lots of good suggestions here. I was hoping to be able to pipe the buttercream using my new grass nozzle (great fun!), but if I need a fall back position at least I shall have a lot to go at!

I wish I had known about colouring coconut ( for grass) years ago, what a good idea.I don't have to make birthday cakes any more, but will pass on that tip to DD and DIL.
Green butter icing is just wrong grin nit sure aibcoukd bring myself to eat it
