Coconut flour

Does anyone have experience of baking with coconut flour? A recipe site or any tips would be helpful.

I have a bag and ventured to use it once - replaced half the flour in some scones - they were very heavy - I think I put a spot more baking powder in too but if I tried it again I would put more.

You need to increase the number of eggs in a recipe because baked goods tend to be quite dense.

I made these pancakes at my DD's house on Sunday. They are trying to stick to a gluten free diet. They were a bit weird to cook but turned out really well, and the grandchildren demolished them as soon as they were out of the pan!

does it taste of cocnut? My family aren't fans of thatso even if its healthier they wouldn't eat it
