Spinach and kale

I have just got back from the opticians with a recommendations for prescription sunglasses (ordered) and to eat spinach and kale to combat the slight macular degeneration and pigmentation (?UV damage). We eat lots and lots of vegetables but not these two strangely enough so I need to bring out my inner Gwyneth but I need some help. I don't much fancy either on their own so I suppose I have to give in to the smoothy cult which so far I have avoided. Has anyone got any tasty recipes please - not too calorific I am trying lose weight? Thank you.

I am not keen on either veg, so take a Macushield capsule daily instead!

I like spinach, raw or cooked, but for kale I prefer to make it into 'Chinese crispy seaweed' on a baking tray. There are several slightly varied recipes online.

Spinach is one of my favorite veg. You can buy it (in season) pre-washed in bags, then it just needs a few minutes in the microwave.
Years ago I had a recipe of plaice and spinach bake. A sort of fish pie, with grated cheese over mashed potato topping. A few chopped spring onions with the fish and spinach.

I put fresh Spinach & Kale into the soup I make in the Morphy Richards soup maker that was recommended on here. It only takes about twenty minutes on smooth. It's a great gadget! I also put in fresh Watercress and other veg. Delicious and nutritious! grin

Kale and mushroom lasagne is excellent. I cannot eat carbs so my pasta layer is aubergine, but you can obviously use sheets of lasagne. You can also dry it as someone else has suggested and mix it in a bowl with an oil of your choice with things like garlic, chilli, crushed nuts - or any combination.

We don't like kale and spinach so I often put some frozen cubes in casseroles. You do not notice it.

I am a member of the Macular Society and if you look it up on line there are many recipes specifically for kale because of its lutein content.

Thank you charleygirl I am rather concerned that I look up pigmentation and several ophthalmologists were saying that optician could not diagnose this and that one had to see and ophthalmologist. I try the spinach and kale though.

Try roasting the kale in the oven as Elrel suggested.

Cut out the central stalk. Spray or drizzle with a little olive (or any) oil and put into a hot oven on a baking tray for 3-5 minutes.

Be careful it's easy to burn it.

Some seaweed kale recipes add a sprinkling of salt, sugar or a spice.

Thank you but I really hate that seaweed stuff in Chinese restaurants and I never use salt or eat salty foods so I think I might look for some soup or smoothie recipes for the kale - I don't have a problem with the spinach just the kale really (isn't it cattle food?).

Re the macular degeneration part of the OP, as well as the spinach/kale/broccoli my husband's been advised to have a glass of Argentinian Malbec with his evening meal - you can imagine that he really hates that!

Teetime I assume you do not grow your own. When home grown it is just so tender and beautiful. The kale you buy is completely different. If you know anyone who grows veg try to get them some heritage kale seeds called hungry gap. It is a flatter leaf with red coloured edges and a lot milder taste. But it's a long wait!!!! The seeds are hard to find but I know they have some at BArnsdale Gardens.

Sadly no our garden doesnt support veg growing and we have tried but I am prepared to put my back into the Malbec treatment... I have great strength of character.

If you eat pasta or casseroles you can just drop spinach in the end of cooking and it will wilt down. You won't even taste it. Also put into bolognese sauce and lasagne.
If you can't eat these two veg. I can't imagine how you could drink a smoothie with them in it !?
