My DDIL has recently had a minor heart attack and hospital have put her on a low carb regime. All very sensible as I'm sure losing weight will help. However, they are all coming to stay for a week of the school hols and I am wondering how to feed 6 on a low carb regime. Don't want to make a big issue, and I prefer to do one meal for us all to share. Usually I prepare lots in advance and freeze so that when they are here we can make the most of time together. Puddings seem to be the biggest challenge, my usual crumbles, tarts etc will be no good. All ideas gratefully received.
