Butter sauce.

Many years ago, I used be able to buy a frozen smoked haddock in a butter sauce, which was delicious.
Alas, this product has not been available for years, so Gransnetters, can you help?
Do any of you know a recipe for a Butter Sauce that I could make?

BUTTER SAUCE

Ingredients:

4 TBS butter
4 TBS flour
1/2 tsp salt
2 cups warm milk
2 TBS lemon juice
chopped parsley (optional)

Instructions:

In a saucepan, heat the butter until melted. Add the flour and salt. Cook for one minute and whisk in the warm milk. When thickened add the lemon juice and heat through. Sprinkle with parsley when finished topping the fish.

For me, a butter sauce would be a hollandaise. But the recipe above is for a bechamel, which also fits the description.

Can you get ready-made hollondaise in the UK? I used to have to import sachets of powdered hollandaise sauce for my mother as this is less fatty than the proper stuff made from scratch.

As butter sauce, by definition, contains a lot of butter, it is very fatty and fattening.

Why bother with a sauce? Just put a dob of butter on the haddock!

Smoked haddock with butter is delicious but not the same as having a something with a sauce consistency poured over the smoked haddock, butter sauce is very nice, but I prefer cheese sauce.
