Can anyone recommend a good comprehensive book which discusses the medicinal/health benefits and uses of herbs and spices? There's a bewildering array of them on Amazon but I have no idea which to go for. I don't want one which majors on pretty pictures, but it does need to be readable and with illustrations and recipes in where appropriate.
Could be that it's better to get one on herbs and one on spices, in which case any recommendations of either are also welcome!

Save your money and find a nutritionist to meet with you. While there are so many herbalist etc around, it has been medically proven that taking some combinations of "natural" healing medicines can actually even be deadly.
Remember that many chemicals are going to remain in your liver. My father, who was very into the vitamins, minerals etc. died of a very rare cancer of the bile duct which very well may have been affected by years of self-medication of natural so called products.
Save your money up, see a licensed specialist first.
And there are many vitamins which are sold that are completely useless.

Grow your own drugs by James Wong. Interesting and practical.
