Black Country dishes

My mother made a dish called "bacon glory" when I was a little girl. Similar to some of these recipes Mick. It consisted of breadcrumbs made with stale bread, onions, dried herbs and rashers of bacon cut into pieces. It was layered in a baking dish and baked in the oven. The breadcrumbs on the top were lovely and crispy. I don't know if any liquid was added. We lived in Cumberland, nowhere near the black country.

My Mum cooked Grey Peas (Grey Pays) at least once a week.

Not had them for many many years!

NJ I bought a tray of gray pays and bacon from our local butcher just the other day!

My mother did similar but with potatoes in layers and we called it Lancashire hot pot.

I add a little stock but mum just added water.

Faggots and Peas and Mum used to make a kind of savoury suet roly-poly with onions and chopped bacon. Very tasty indeed, cheap and filling - but probably very bad for us.

There's nothing like Black Country faggots! Still readily available locally, of course...nothing like those frozen ones.

I can taste the delicious faggots my mum made now. I think it was a two day process where the fat was skimmed off on day one. Pass the mushy peas please.
