A few days ago I got cremini mushrooms and I decided to marinate them! I don't know if you also do it so I decided to share this recipe with you!
1 pound cremini mushrooms
1/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup diced onion
2 cloves garlic
2 teaspoons brown sugar
1/2 teaspoon dried oregano
1/2 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes ( it is optional )
1 bay leaf
salt and ground black pepper
2 tablespoons chopped parsley leaves
Firstly you need to cook mushrooms in boiling salted water ( for about 3-4 minutes ) and then drain them. Next step is to combine all ingredients with mushrooms and then transfer to airtight container in refigerator for a few days. ( 1-5 days depending on your preferences ).
