Hello,
I am looking for different recipes using corn that any of you would be willing to share.

Be it fresh, frozen or canned doesn’t really matter.

I made this the other day Faye.
It was delicious! I don’t have a slow cooker so just did it in my ordinary oven at 120C

I often make sweet corn pancakes. As an alternative to potatoes, pasta etc.
Make a thick batter with 2 eggs 2tbsp plain flour s&p, a little water. Add a small tin of corn and fry in a little oil until brown on both sides. Or you can make 4 small ones.

Hi Faye this is a fab, easy recipe using corn:

1 can creamed sweetcorn (in the UK I can only buy it at the local South African shop)
500 gr self-raising flour
pinch of salt
3 tablespoons sugar
2 tablespoons oil
2 beaten eggs
200ml milk (I've used buttermilk too)

Mix wet ingredients and add to dry ingredients
Bake at 180 degrees until a skewer comes out clean.
Cool down, but best served fresh with lashings of butter. Yum.

What’s creamed sweet corn like, GK?
In a white sauce? and is that a sweet dish, or to go with a savoury dish as an accompaniment?

This is a recipe that I use frequently so I thought I would share (My family loves it)

Corn Pudding

1 box of Jiffy cornbread mix
1 stick of melted butter
1 can whole kernel corn
1 can cream-style corn
1 cup of sour cream
2 eggs (beaten)

Mix all ingredients together leaving the Jiffy cornbread mix to blend in last.

Preheat oven to 375 degrees. Grease 9x13 casserole dish
Bake 35-40 minutes or until the center is firm.

On no.............Forgot to add to DRAIN the the can of whole kernel corn before adding it to the mix.

Oops I should have titled my recipe: Sweetcorn Bread. And bake in a loaf tin.

JaneA It's a bread as an accompaniment to a meat meal. But delicious at any time!

I see GrandmaFaye writes above "Cream style corn" - that must be the same thing? I'll post a photo of the tin in a while.

Cornflour is just ground down maize.
And cornflakes are flattened dried maize kernels.

Thanks GK My Dil makes corn bread to go with chilli type dishes but I think she uses polenta rather than actual corn kernels.
