Apple Crumble

About to try to make apple crumble....again. If i cook the apples first it goes too mushy. When I tried just placing the chopped apples in the dish uncooked, they were still hard! Help please!

I'd do almost blush anything for a huge bowl of rhubarb crumble with hopefully some custard or cream. ??

I usually make a lot of crumble topping and freeze some.
Unfortunately, there is none in the freezer at the moment.

Raymond Blanc no less suggests pre cooking the crumble and adding on top of cooked apples then heating.
Came from DD, we’ve done this a few times and it’s great for making in advance and assembling before final cooking. Do double the crumble topping though.?

Now - shall I pre-cook the rhubarb?

Perhaps soften in the microwave.
I can only offer custard or ice cream

The rhubarb is coming up nicely but it's raining out there. DH said he'd go and pull some but he hasn't.
Now, if I ask DH "did you pick the rhubarb as promised so I can make a crumble?" will he dash out there?

I use half and half cooking and dessert apples cook them in a little apple juice in the microwave and thicken the juice with cornflour.I make crumbles one week and sponge topping the next ,I make one portion sizes for MIL and some pineapple sponge for her too .

Yummy. I love crumbles.
I recommend par-cooking cooking apples with a tiny splash of water, (about two dessertspoons) before putting in the dish your serving it in.
I make the crumble topping with Jordan's chunky porridge oats mixed with enough melted real butter to make it lumpy and brown sugar (demerara gives a crunchy toffee flavour)
Dee-lish.

I don’t bake or make puddings anymore since OH died he loved puddings.

I caught a minute of the sainted Nigella this morning and although her crumble was plum, she added crushed amarretto biscuits , first, a layer over the fruit to thicken the juice and then add to the crumble mix.
I am going to try it.

Yes, Bramleys and soften in the microwave. No sugar! There is sugar enough in the topping and, presumably the custard that gets poured over it.

My favourite pud, from Bramley’s in the garden.
However I always cook the apples first (microwave) then sweeten with a little honey.I use butter and brown sugar with flour for the crumble topping and always a thin to medium layer of it on top of the apple.Nothing worse than
Too much crumble and little apple.

Meant to add, cooking apples need sweetened. I add about 3-4 tablespoons of sugar to the apples before adding the topping. Good luck.

I’m using frozen apples off our own Bramley tree sliced before freezing, thaw and half cook before putting the Blackberries and crumble on, then 25mins in oven.
The best of all puds
