I enjoy two poached eggs on baked beans on toast as a quick, healthy and easy lunch. Takes me less then 4 minutes to make in entirety.
Pop slice of bread into toaster, half a tin of reduced sugar and salt b.beans (Sainsbury's 4 pack cost £1), into special dish with lid in microwave for 45 secs.
Whilst that is cooking, break two eggs into microwave egg poacher and use fork to pierce yolks. Once b.beans are done, place this in microwave for two minutes on low heat.
Forgot to say, that my first thing is to put mug under water heater, with tea bag, to have with this meal.
Toast popped out of toaster and put on plate, no need for butter or anything, cover with heated b.beans, then the two eggs, done to perfection put on top. Last thing is to remove t.bag from mug and add milk. Voila, my lunch in well under five minutes
The art of poaching eggs in a microwave is really to know your microwave. You will need to experiment to find exactly the timings and heat settings to get the eggs as you like them. I like mine, with firm whites and runny yolks.
There is no faffing about with this with water, vinegar etc. and I get excellent results every time.
Do remember to pierce egg yolks before cooking, otherwise they will explode in the microwave.
This wonderful lunch works out at about 60 - 70p
