cauliflower

I bought a cauli looking forward to cauliflower cheese.
But husband says he can't eat cheese because of his current catarrh problem hmm.
Has anyone an idea of another way to cook it? I find it almost tasteless on its own as a veg.

We eat low carb and frequently have cauliflower, so will try the pizza recipe, thanks Bradfordlass. I attempted to fool the GCs with lovely creamy cauliflower and cheesy mash in lieu of potato, as they don't like cauliflower........but it only took one mouthful and up went the cry, "yuk, cauliflower"!

Cauliflower couscous always sounds nice, not sure how its made.
Presumably grated cauli and other 'stuff'?

If dh can’t take cheese does it mean he also can’t take the butter and milk suggested in the above recipes. They are also dairy.

Roasting with bacon is yum.... also garlic.

I agree with Kitty,I find I roast most of my veg these days,carrots broccoli all seen to be extra tasty ,if you have time look at Delia Smith's online recipes just add spices and olive oil and a bit of imagination.a word of warning keep checking they are not too charred.Kale is also good.

Well I made it and ha enjoyrd it!
I used some partially cooked onions and red peppers from yesterday, liquidised, some soy sauce. Then the coconut milk. Browned in a hot oven.
But I wouldn't buy Tesco coconut milk, it was rubbish, no taste of coconut at all. Mostly water.
If I ever make it again I'll get the chinese one, it's more creamy, better flavour.

Soya milk makes lovely sauces and custard (but you probably know that already!).

I haven't tried coconut milk except in a curry.

Thanks for the ideas folks. I think I'm going to boil it and make a sauce with coconut milk. plus cheese for me.
It's anything dairy he won't eat.

You could always make it into a pizza base with various toppings (sans fromage pour DH)

We always make white sauce to go with cauliflower as some of our family prefer that.

Grated cheese is always served separately so cheese fans can help themselves.

I love the taste of cauliflower but I may as well eat a bomb - it explodes my stomach.

But as for another way to cook it - how about a cauliflower steak?

It’s lovely raw and tastes completely different from when it’s cooked. Get some dips and add raw carrots.

My mother never served cauliflower plain, it was always served in a well flavoured white sauce (made the proper way, the roux method, with an added pinch of nutmeg - it was my job every Sunday lunch-time so I never make it now!).

You could serve your DH's with the sauce and add cheese to your sauce. Or roast his. Or make it all into cauliflower cheese and freeze some single portions for yourself and give him some frozen peas.

Dairy foods won't make more phlegm though.

Cut it into 2 inch pieces and toss with a tablespoon or two of vegetable oil and a generous sprinkle of curry powder. Spread on a baking sheet and roast in a hot oven for 15-20 minutes until it starts to brown and soften.

Divide cauli into bite sized florets, add diced apple, sultanas and add mayo with curry powder to taste. Adjust ingredients to taste - I don’t like it to taste too sweet.

Cauliflower and well seasoned white sauce is also nice. You can sprinkle cheese on your portion.
You could fry some bacon crispy and sprinkle that on top.
