Horseradish - mega harvest - what can I do with it?

I came home yesterday to find that DH had (as requested) dug up the horseradish plant in the garden and he has left all the roots in a washing up bowl in the kitchen to "do nice things with" I have no idea how to process it or make horseradish sauce - Help! All suggestions much appreciated.

Wash, grate (a Magimix could come in useful or else wear gloves)
After that I would try freezing it for use in sauce/creamed horseradish in the future.
But be very very careful not to put your hands anywhere near your face or eyes. Even the fumes may make your eyes water.

I usually just leave it in the ground and just pull a little bit at the time....you can replant the roots, now is a good time. I grow it in an old bin with compost...easier to pull up.

Thank you, I dug it all up last year and still had a nice new plant come up this time. I'm sure there are some oddments left in the ground to re-start themselves in the spring. The leaves are very pretty so maybe a pot is a good idea. MawB, yes I have a magimix so I'll start on the grating tonight.

With good pungent horseradish I advise swimming goggles when grating or taking the lid off the food processor as the vapour will make your eyes stream.

Grate (taking the precautions above) and freeze; or grate and store in some rice wine, cheap dry sherry or similar.

We have a lot too. Maybe it's the year for horseradish. It's great stuff. Our home grown condiment. It's so strong. It must be good for you.

I always keep some in the freezer, it’s easier to grate if frozen, lovely grated over sausages when frying or on beef before popping in the oven, I also like a little grating added to spaghetti Bol. I can’t remember the exact recipe, but I think the best creamed horseradish recipe is the hairy bikers, I can look it out in the morning if you like

Thank you, I shall be grating some into some mashed potatoes this weekend and blending the rest with sugar, salt and cider vinegar and putting it in jars.
