Hello,
Is there anyone out there who has made a stuffing with dried cranberries dried figs and Italian bread (no meat) probably some currants and onions. I found some in my freezer and used it to top some pork chops. It was originally for stuffing a couple of poussin at Christmas but I don,t have the recipe. I could make a guess but if anybody knows exactly what I mean I would be very grateful.
Thanks Mums from a Great Grandmum

I had prepared the stuffing of dried cranberries and dried figs by adding whisking egg, salt n pepper and tossed it on pan. Then I added this stuffing on crusty bread after that baked it for 50 to 60 minutes. It was awesome!

I've never made stuffing with cranberries and figs but have used other dried fruit, especially apricots.
The basic recipe is breadcrumbs (I've even used spice buns) finely chopped onion, mixed herbs, grated orange or lemon rind, egg and sunflower oil. Mix to the required constituency.
Then add dried fruit. You might need to soak the fruit first.
I've used dried apricots and apples, experiment.
I form the mixture into balls and roast them beside the chicken.

Consistency, not constituency!
