Christmas Mincemeat Ice Cream?

If you simmer the brandy first, let it cool before mixing in you will have "burned off" the alcohol it will still have the brandy flavour, so will freeze ok

I understand that alcohol can prevent freezing in ice cream, so don't be too generous. grin

Plenty of time to play around and try a few things. Like whip up double cream and add a few drops of vanilla and some good quality mincemeat and a bit of brandy- mix well- and put in tray in freezer and stir up with fork every hour or so.

And try the same with half whipped double and half custard- and add some crumbled meringue too?

I wasn't a member of GN last Christmas so apologies if this is a repeated request.
I want to make a simple pud of vanilla ice cream, mincemeat and brandy.

I don't want to use chopped up mince pies instead of mincemeat because I don't want any pastry in there.

Any advice gratefully received (...and Happy Christmas!) x
