Condensed milk

Years ago I used to make a lemon dessert with condensed milk, lost the recipe and wondered if anyone could help out,

We had lunch with a friend recently who made a lemon cheesecake using condensed milk, Greek yoghurt and double cream. I’ll see if I can get the recipe from her!

Mmm, I used to love condensed milk as a child. Sorry, can't help with a recipe but I'll be watching.

Could it have been Lemon Freeze ? I will look it up and report back later. It uses raw eggs and I stopped making it when there was the Edwina Currie scare but I believe it is OK to use them now.

Old family recipe - lemon meringue pie without the pie!
1 x 405g tin condensed milk
3 whole eggs
juice of 3 lemons and grated rind of 1
Separate the eggs, set aside the whites to whip with sugar as a meringue topping.
Whisk egg yolks until pale and fold into condensed milk with lemon juice and rind. Give the lot a good old stir until stiff, and turn into oven proof container.
Top with the meringue mixture, into a medium oven for 15/20 minutes

Lemon Freeze

2oz butter melted
2oz weetabix or cornflakes crushed
3oz sugar
2 eggs separated
tin condensed milk
quarter pint double cream
juice of 2 lemons.

Mix weetabix and melted butter.
Freeze for 20 mins
Mix yolks,milk,cream and juice.
Whisk whites stiffly and fold in.
Return to freezer compartment.
Remove from freezer 10 minutes before eating.

I used to make that. I used condensed milk and cream mixed, then lemon juice added which thickened it. Put it on a buttery biscuit base. Yum,

I do one with jelly and evaporated milk.It is very simple and makes a mousse.

Base is biscuit crumbs and melted butter pressed into tin. Whip a jar of cream, add condensed milk and juice of whole lemon. It thickens up and is delicious.

BBbevan I remember being on a weekend trip with the school and we had tubes of condensed milk which we enjoyed sharing while in our bunks after lights out. Think I'm very lucky to still have my own teeth!!!

Mmm, condensed milk! My guilty pleasure, still, is to eat spoonfuls out of the tin. When we were children our grandmother used to make us condensed milk sandwiches.

Condensed milk sets with the addition of lemon juice so is very versatile. For special desserts I use the Carnation website recipes, which include a lemon meringue pie. I have sometimes used a bought sponge flan instead of the crust and omitted the meringue topping for a tangy dish. The Banoffee pie and fruit fools are delicious too!
