* Hot Cross Bun Recipe for those who asked.*

A few weeks ago, I promised on a thread to upload my hot cross bun recipe for those who asked for it. So here it is below.
I usually half the quantities if I'm not having family visiting.

Marydoll’s Hot Cross Bun Recipe

Put in a bowl:
1½lb (450g) strong white flour (you can substitute 8oz 225g of wholemeal flour)

2tsp salt

2tsp mixed spice (I put in more, as my family like them spicy)

Rub in 2oz (50g) of butter.

Stir in 2oz (50g) caster sugar

And 6oz (150g) currants/ sultanas/raisins.

Sprinkle 1 sachet (7oz) of Easy blend yeast into the mixture and mix well.

Warm ¾ pt (375ml) milk in a saucepan or microwave, it should be warm, but not hot.

Add the warm milk to the flour mixture with 2 beaten eggs.

Mix well into the flour mixture until it forms a soft, but not sticky dough.

If, after all the flour, milk and eggs have been mixed the dough still feels tight, add a little extra warm milk, a bit at a time.

Turn out dough and knead for about ten minutes or use a dough hook in a mixer.
Put dough in a large oiled poly bag or cover the bowl with cling film and leave in a warm place for 45-60 mins until doubled in size.

It can also be put in the fridge and left overnight to rise, just remember to let it come back to room temperature, before baking.
Turn out on a floured surface and knead again.
Roll into shape and leave to rise again for approx. 35 mins.

Mix 5oz plain flour, pinch of salt and 8tbs water to make dough for crosses. Pipe onto the buns or miss that stage out.

Bake, 400°C, 200°F or Gas 6 for 10-15 minutes.

Dissolve 2tbs caster sugar in 4tbs milk, heat 20 secs in microwave and paint over the buns, once they come out of the oven.

Enjoy. They are nice toasted the following day.

Thanks Marydoll. Worth just pointing out for those who are new to yeast recipes that a sachet of yeast is 7g. You'd get quite a rise with 7oz........ grin grin

I was trying to cover all bases by giving imperial and metric measurements! By the end, I was getting fed up typing it!!! grin

Thanks Marydoll I think I will give them a go. I haven’t made hot cross buns since I was a young mum. My DH said we could use them to cobble the road.

I wonder if I could use Marydolls recipe in my bread maker? I have arthritis in my hands and can’t knead nowadays. How many buns does it make?

If you have any leftover HCB’s, they make an absolutely delicious bread and butter pudding!

Suedonim it makes 20 large ones.
I have RA and my hands are badly affected, so can't knead. I used to use my Magimix to do it, now I have a stand mixer. I do like my gadgets! grin

Could you put the mixture in your bread maker and once it has been kneaded, take it out? There is quite a lot of mix, so perhaps halve the quantities. ?
I have started getting my 4yr old DGD to roll it it into balls. Child, slave laber. ?!!

Thanks, Marydoll! I think I could do it in the bread maker. I’ve done bread rolls in it and these are essentially the same thing. We maybe having a family gathering at Easter so 20 would soon go. If they don’t - bread & butter pudding awaits. grin
