Lurkers' week: what are you having for lunch?

It’s Ryvita and Philadelphia here (as it is pretty much every day grin) so please do inspire us with whatever you’re having.

I'm feeling rather hard done by in the food department. My new job in a boarding school has meant that since January, I've been having a FULL lunch everyday. Salad, main meal, dessert. All delicious and all made from scratch, including the cakes and puddings (home made choux pastry - we have a chef, not a cook!).

However, since the school has shut (CV), I'm now on sandwiches. Hmph.

Cottage pie today, thank goodness the pasta has all gone!
With a cheeky glass of red
Followed by a Tuffnells chocolate bar
And a coffee.

Today a leftover stew mixture of chicken beef and beans - with freshly cooked potatoes and Tesco's cauli and broccoli mix, microwaved..

I have just had M&S chunky fishfingers in brown bread with brown sauce. Yummy - and a glass of rose on the side. Will set me up for an hour or so of gardening!

Guess I finished Lurking and come out of the closet.
I've made oven baked celeriac with home made roasted potatoes and a Quorn chicken pie. I am amazed at all these new plant based products that have come on the market. Been a vegetarian for 23 years and at last there is a good choice available. My food feels revived.

Homemade tomato soup today. I was in mid chaos making birthday cakes for our three family March birthdays, so we’d to clear a little space on the table for our bowls.

All done now, apart from the small matter of filling, icing, decorating, which includes fashioning a Luigi and a Gooiji out of fondant... That can be tomorrow’s job, so I’ll be opening my red wine soon, Oopsadaisy. smile

Some friends popped in, we had pasta with tomato and chilli sauce, garlic bread with lemon tart and cream to finish. Washed down with a couple of bottles of red.

Our excuse is that DH is ill and needed cheering up.

No dinner tonight though.

Thanks to this thread I have bought some Crackerbread. I love it with marmite, then topped with some Longley Farm Cottage cheese. Tasty and quite healthy.

We have our main meal at lunchtime. In the evening something like a toastie, or your Ryvita etc and fruit.
So today we had a veg. casserole, made from odds and ends of vegetables, with salmon fillet. V. tasty.

I’m trying hard to lose weight after being told by the nurse that I am overweight and bordering on obese. She was so lovely and told me what I already knew. I AM FAT! Today I am having cottage cheese with crisp bread and a pineapple lolly (ASDA), pieces of mango and some grapes. I have cut out all the chocolate, crisps, biscuits and cakes. Then for tea I have prepared some home made broth with a yogurt to follow. I will do this as none of my clothes fit nicely and I don’t want to drift into the stroke or heart attack category. I will get there so my lunches will sound a bit boring to you all. Have a lovely Wednesday.

We had an M & S butter chicken curry with rice (very tasty!) We were going to have it for tea, but we go to a pub quiz on a Tuesday and the suppers there have been quite generous of late. We'll just have a snack for tea instead.
