Frozen cauliflower

As I am by myself and do enjoy having plenty of different veg with my main meal, I always used to buy fresh carrots, cauliflower, broccoli, etc. when I did my weekly supermarket shop. Always ended up throwing some of these away towards end of each week due to them looking dried out and not very nice.
About three years ago, I moved over entirely to using frozen veg and it is wonderful. Keep in my freezer some cauliflower, Broccoli, Peas, Beans, carrots, and, my favourite, - brussell sprouts. Able to have a really good mix of veg with my meals, no wasted food -and I have been given to understand that the vitamen content of frozen veg is the same as that freshly picked.

Thanks annsixty I was just thinking about cauliflower cheese and would it be OK to freeze it smile
Now what do I do with that savoy cabbage....

I have used frozen cauliflower for cauliflower-cheese, thawing it in the microwave before adding the sauce, sprinkling grated cheese and sesame seeds and browning in the oven.

Steam the cauliflower rather than boil. Frozen cauliflower tends to go too soggy if boiled.

Sorry , should have read the OP more thoroughly.
I meant I have made cauliflower cheese from fresh and then frozen it.

I have frozen cauliflower cheese, it was absolutely fine.
Supermarkets sell it I believe.

So just to clarify, you don't freeze the cauliflower cheese as such just the cauliflower?

I have used frozen cauli too, it is fine. It also makes lovely soup, with the addition of half a potato, half an onion and a Knorr stock pot. Just cover with water, boil, then blend, adding some grated cheese at the last moment, plus a little cream if you wish.

I have farview and it was absolutely fine. From frozen, I put it in a pan of hot water to thaw out and semi cook and then just used it as I would fresh cauliflower. On occassion I've added frozen broccoli as well. Love cauliflower cheese with a gratin topping!
