This is a Fudge Icing made in the Microwave. It doesn't have evaporated milk though, but it very fudgey

It is so old I only have the weights in ounces

4 oz Butter
1 oz Cocoa Powder
8 oz Icing Sugar
2 Tbsp Milk

Beat together butter, icing sugar and cocoa powder till smooth. Stir in milk

Cook in microwave for 2 minutes. Then beat until smooth and glossy

Enough to put on top of cake and sandwich together.

This is my one for "toffee fudge icing" - use it for icing cup cakes with chocolate sprinkles. Also do a cheat and use it on a a toffee cake packet mix and do it in a 2lb loaf tin which means I can cut it in half and freeze it. It defrosts very easily if I get unexpected visitors (not happening just now!!).

4 tbsps Evaporated milk
3 " Dark brown sugar
50 gms Butter
150 " Icing sugar

Put milk & butter in small saucepan with brown sugar and melt. Simmer for 5mins then tip into bowl. Leave to cool. Sift in icing sugar and whisk until smooth.

Pretty similar to Calendar Girl's and I do find it "fudgy" especially when scraping bowl before washing.

P.S.

I sometimes just beat the marg to soften it, as melting can make it too runny.

This is a milk chocolate icing from an old Be-Ro recipe that we like. It goes with their milk chocolate cake.

2.5 oz marg/butter.
4 tablespoons cocoa.
8 ozs sieved icing sugar.
3 tablespoons evaporated milk.
1 tsp vanilla essence.

Melt marg/butter, blending in cocoa, then stir in icing sugar, milk and essence.
Beat until smooth and thick.

Quite chocolatey, don’t know if it’s fudgey enough for you.
A newer version was not a patch on this old one in my opinion.

Carnation Milk Company website has a recipe on it using Condensed Milk, sorry can’t do the link on iPad .

Many years ago I had a Carnation recipe book. It was one of those free things that you could order from the company. It had a wonderful recipe for chocolate fudge icing using evaporated milk, cocoa and sugar but I’m not sure whether it was caster or icing. I’d really like another recipe if anyone has one.

I’ve tried looking online but no success to date
