What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Thai green prawn curry tonight, with some fancy rice* that’s been in the cupboard for months.
*Wholegrain, Jasmine, Red rice and Riceberry - whatever that may be.

We had a cauliflower/macaroni cheese, extra cheese and breadcrumbs on top, whacked under the grill. One of dh’s favourites and I’m very partial, too.,

Chicken Kiev out of the freezer here with Caesar salad. Coffee liqueur ice cream for pud. Easy.

Cottage pie for DH and Shepherds Pie for me (and yes there IS a difference....) with lots of veggies then the last of yesterday’s fruit crumble with a dollop of cream ?

Going to have a 'slow-cooked' chicken curry with rice. Finish of the tiramisu from last night - it was yummy.

I still have a small end of Christmas gammon, so tonight that’s going to be diced and fried in a hash with potatoes and onions, and a lot of the lovely fresh spring greens that came in our veg box added, once steamed and chopped.

Tonight it will be a baked potato stuffed with cheese and onion, served with a salad. We had steak and kidney pudding last night so need to throttle back a bit!!

Today is duck breast stir fry with noodles. Just chopping the veg to put aside for later.

Tonight was rump steak and roast veg....red peppers, beetroot, courgette, sweet potato, potatoes and red onions.

Roast beef, Yorkshire puddings, green beans, carrots, peas, gravy and horseradish sauce, plus glass or two of red wine. Full up so won't have pudding.

Just eaten garlic and rosemary roast lamb with roasted parsnips, carrots and spinach. There’s blackberry and sour cherry crumble and the last of the vanilla ice cream to come.

A trot to Lidl tomorrow to replenish the freezers now that Ive emptied them a little can see what’s needed!

Bacon & avocado panini for lunch; chicken breasts, roasted with garlic & herbs, roast potatoes, parsnips, buttered cabbage for dinner.

I've just taken a salmon fishcake & portion of chicken traybake out of the freezer - so fishcake for lunch and chicken for dinner.

And a glass of white wine with both. smile

DH is on catering duty this week and he made salmon en croute with jacket potato and broccoli. I had an apple for afters. I am catering next week and we will be having lots of freezer mysteries.

I made Jambalaya, minus the prawns and celery, but it still tasted great accompanied by a large glass of wine but certainly no pudding, mighty full up now!

Sausage meat plait with potatoes and sweet potato mash. Peas and carrots.
Rice pudding , a treat we don’t often have pudding.
