What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

A stir fry with some bits of leftover chicken from the freezer, assorted veg, and noodles (remains of 3 different packets to use them up.).

Tomorrow will be a relative extravaganza, though - an oven ready pack of spare ribs in sticky barbecue sauce, that I picked up today in M&S while buying the wherewithal for a vegan lasagne to take to dd’s on Sunday.
I shall probably do lots of wedges with it.

I’m carb free until Saturday so omelette with ham, cheese and chives and mixed leaf salad followed by yoghurt and berries.

Fish and prawn curry with cumin and coriander rice. All made from scratch. The recipe is in the Waitrose April magazine.
Our son came for his lunch, so we've already eaten it.
It was delicious, and easy to make.

Lamb chops (gosh they were expensive, £6 for four tiny ones!)
mint sauce, cabbage, peas, roast potatoes.
It was very delicious even though I say so myself!

I have a couple of chicken fillets in the fridge so will probably make chicken Kiev with mash and peas. Mary Berry's ginger cake to follow.

Apple pie just out of oven - DH prefers it cold - don't ask !
First course will be tenderloin in wine with onions lemon and mushrooms, finished off with Greek yoghurt.
May do mash or saute spuds . Veg. is whatever is going off !
