What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

I'm using up as much as I can from the freezer over the next three days so tonight we're having Meatball biryani (three home made pork and three Tesco leftovers,) with some added cooked diced chicken and a rather shrivelled looking red pepper from the salad draw.

My electric pressure cooker does a lovely job of biryani. The rice is perfectly cooked.

Pheasant casserole, made by DH, pheasant was gift from a friend who shoots, followed by gooseberry crumble, frozen gooseberries from our allotment, cheap meal!

For myself and the old man next door gammon steak with fresh pineapple/fresh veg/new potato's.
I made him an individual rice pudding as I forgot to take a cheesecake out of the freezer this morning.

Baked Yoghurt marinated chicken, baked potatoes, roasted parsnips and steamed leeks. I’m very fond of leeks. Mince pies for pud, with plain yog, ice cream or custard depending on DH.

Chicken curry , rice , naan bread. Followed by apple and blackberry crumble and ice cream. The Bramley apples were give to me during the Summer, I cooked and froze 6 bags of stewed apple ,

I know? that’s why we had it. I was intending to do a rack of lamb with posh gravy and stuffing but I was out with the dog at 3.30 this morning (upset tum) and so exhausted I decided to do that instead.

It is delicious and easiest ever. So little effort for so much taste!

Roast pork, with crackling, dauphinois potatoes, carrots, sprouts, green beans, apple sauce and gravy.
A Seville orange gin and tonic (will be my 2nd today - does that count for afters ? )

We have a "Cook" frozen food shop in our town which opened this year and was recommended by Auntieflo but which we have never used and so three of us decided to choose an individual meal and I just made a bowlful of mashed potato. I had beef bourgignon and it was delicious and plenty for one. For dessert we had banana custard as I bought a kilo of reduced ones for 23p last night. The rest I used for a banana cake which we will have for tea. I love a bargain !

We had chunky fish finger butties. On white bread that’s the rule - soft thick Warbie’s. Thickly spread with butter and topped with tartare sauce. Food of the gods! Followed by a slice of cherry Genoa cake (not home made who d’ya think I am - Mary Berry?) with a cuppa.

Today it will be an M&S quiche with a mixed salad, home made apple crumble and custard.

This reminds me of my dear Mum buying tinned food with no labels on from a bargain basket in the local mini supermarket when I was a teenager.

She came home proudly with her bargains a couple of times a week. A can of food with no label costing a few pence.

Will we have beans on toast? Oops sorry it’s rice pudding.

Anyone fancy dessert? I wonder what it’ll be tonight. Oh dear it’s garden peas!

We loved her for it and still nothing went to waste. If it was sweet instead of savoury it was used the next day in context.

Hopefully not the same as last night. Everything frozen by me is unlabelled. I prepared onions, sweetcorn, mushrooms and fried potatoes to go with a sirloin steak. It was spag bol. I live on my own so I cooked the lot and enjoyed it with two glasses of wine.
Another attempt tonight- it could be curry!

We had the remains of Nadiya's Thai peanut chicken, left over from a couple of days ago.

Tomorrow will be a couple of lamb shanks, pre cooked by Mr Sains*, with some tenderstem broccoli.

It's in her new book based on the TV series, Calli DD sent me a screen shot of the recipe because it's not in the programme.

We didn't actually try it tonight as DH fell asleep tchgrin

I also want to have a go at the limoncello and elderflower cordial cocktail that was featured in one of the early episodes.

A bit later we christened some new cocktail glasses with Nigella's Green Mean Dirty Martini because I remembered there was a jar of home pickled cucumber lurking at the back of the larder and you use the juice!
I pickled cucumbers at the end of summer, must look that up.

Oh, don't have any vermouth.
