What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Copying a Prezzo meal we like! Chicken escalopes with Gorgonzola sauce. Chicken butterflied, covered in cling film and bashed with a saucepan. Gorgonzola sauce from internet recipe. Basically Gorgonzola and butter melted together with garlic and spring onion. I add creme fraiche as it doesn’t make enough for our tastes. Definitely not a low calorie option but a nice treat. No pudding of course??

We usually have a traditional roast on a Sunday. I honestly don’t know why, I suppose it saves thinking about it too much. Beef brisket, slow cooker. Roast potatoes, cauliflower, carrots with swede and peas. Red wine gravy followed by Eve’s pudding and custard. Well I suppose I have plenty of time at the moment. Usually mid afternoon on Sunday. Evening was a trip to the local for a couple of beers but not now

My DH has just announced that he is going to make Jamie Oliver's eggy crumpets. Crumpets soaked in beaten egg then fried on both sides, served with crispy bacon on top. More of a breakfast really but he's having it this evening. Too many calories for me!

Am making cheese and onion quiche for Sunday, with roasted peppers, tomatoes and spring onions.
Will also have a bottle of wine between us ( haven’t had any alcohol for a month) and as it’s Sunday will also have a pud,
Apple crumble ( have so much apple in the freezer) and vanilla ice cream.

Chicken caesar salad, (the chicken strips will be warm) with bacon, croutons and parmesan shavings (I use my veg peeler to do them wink)

I will be having a bowl of locally made honeycomb ice cream at some point during the evening.

I have made an old fashioned beef and carrot casserole with mashed potatoes and peas for dinner. Not sure about pudding. I have some homemade Mars Bar ice cream in the freezer.

Ribeye steak with sauté potatoes, courgette and mushrooms, not sure about the starter, either baked Camembert or something with prawns.

Probably eat in the kitchen so that I can watch Strictly ???
