What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Creamy mushroom stroganoff with rice and a glass of chilled white wine. (Its so humid here)

Baked salmon with harissa, new potatoes and sliced courgettes, onion, red pepper and garlic - braised in red wine.

I found a good tip online today. If you want to make a paste stick to something slippery like salmon, mix the spice ingredients together with mayonnaise. Stops it all sliding off during baking.

Cornish pasties and a Greek salad with olives. Yes I thought it’s a strange combination!,
but we like both so it should be ok. We get grocery delivery tomorrow ?

Tonight will be steamed cod with prawns and parsley sauce.
Tender-stem broccoli, leeks and roast baby potatoes .

Chicken thighs tray baked with peppers, red onions, tomatoes, new potatoes, garlic cloves.

And mushrooms - somehow we had 3 packs of baby mushrooms in the Sainsbury's order this week confused

Curry, made with leftovers from a roast half leg of lamb, and among other things, two large tomatoes that need using up, and probably half a jar of the Rogan Josh paste that’s been in the fridge (unopened) for ages - best before date is Jan 2018! I’m not sure how it’s ‘escaped’ for so long until now.

Lazy night as I did a 15 min cycle and no energy left. Fish fingers peas and McCain Home chips. (Large chunky delicious very small portion as I'm supposed to be low carb)

No leftovers today so opened a tin of corned beef plus lovely fresh new veg. Plain and simple but delicious. My daughter won’t touch corned beef though.

Penne, with a ragu sauce from the freezer & salad. A bit boring but I'm beginning to lose the plot!

I have been eating like a queen since being back at work. Salad, then steak last night with potatoes dauphinoise, multi coloured carrots, followed by home made choux pastries and assorted melon. Breakfast was a full brunch, with 3 types of sausages, eggs, homemade baked beans, bacon and pastries.

Roast beef, Yorkshire puddings, broccoli, carrots, gravy, horseradish sauce. Having wine one of these right now whilst it's cooking. Fresh fruit salad and cream to follow, if we have any room.

I eat low carb so just have meat and green veg. I do roast potatoes for DH and Yorkshire puddings when we have beef. Works well for me.

Roast chicken, stuffing balls, roast potatoes, broccoli and runner beans.

Not sure if we are having a desert or starter, we do not eat till
7ish so lots of time to decide.

We eat around 2pm on a Sunday so today it's lime and tarragon baked chicken thighs, new potatoes, spring cabbage, carrots, sugar snap peas and baked parsnips (from the freezer)

Pud will be strawberries and ice cream.

Today we are having sliced roast beef from the freezer. We had a lovely joint of beef from the local butcher about four weeks ago which was far too big, so I froze two meals.
New potatoes, new carrots, cabbage from the veg box.

I have just put a joint of beef in the oven and will be having all of the trimmings to go with it followed by apple and rhubarb crumble.
