veg pasta sauce recipe for fussy husband

If you find a suitable sauce, make a huge batch of it and freeze in one portion sizes. Only one lot of washing up!

There is of course the option of getting him to cook it - or even to just do the washing up!!!

Roast the veg he will eat, I am with him on Mushrooms, devils food, liquidise them not too smooth, add fresh herbs and seasoning.
Freezes easily I make it to keep for Vegan friends in portions, adding the fresh herbs after it has been de-frosted and heated. Could be served over a nice piece of fish.
Dried herbs during cooking, fresh when serving, fresh herbs loose all flavour during cooking, except Tarragon, Rosemary and Bay.

The obvious is puttanesca, usually with spaghetti - various recipes, so you can just omit the tomatoes.

Pesto sauce is made with basil/pine nuts/garlic/olive oil/lemon juice? You could add vegs that he will eat as well. Would go with fish.

Is suggesting he cooks his own dinner a possible option? He might become less fussy and widen his options then ?

My husband won't eat cheese, cream, tomatoes or mushrooms. No dairy.
I sometimes make make a sauce with red peppers but it's faff and takes ages + washing up.
Any ideas?
No meat but could be fish but no shellfish.
