I made a huge pan of tomato and smoked bacon soup at the weekend, using home grown tomatoes. Just gorgeous with home made fresh bread.

I’m cooking a ham hock in the slow cooker on Sunday, lots of stock should be left over for soup.

Butternut squash and sweet potato soup with ginger, garlic and cayenne pepper. I made that at the weekend and it's in the freezer. I love stick to the ribs soup like lentil. I've been making soup all summer but now making slow cooker casseroles for the freezer too.

Just finished a big batch of good old smooth root vegetable for the freezer. Have leeks and chestnut mushrooms coming next week for the next. Delicious with strong cheddar stirred through,

DH likes making soup. His signature soup is bean and bacon. If you chuck some pasta in, it’s a passable minestrone! I like to have lots of chicken soup in for the winter for when cold and flu strike. I think it has magical properties! Though maybe not magical enough this winter.

We have soup year round for lunch unless it’s very hot weather. Carrot and celery at the moment.

These all sound lovely - and inspirational. I can’t be the only person who is not-so secretly tired of salad!
I fancy a big pot of chicken and lemon soup (basically just chicken soup with a dash of lemon juice and a scraping of zest which just lifts it)

I made Italian courgette soup a couple of days ago. I had courgettes and parmesan cheese that needed using up. DH doesn't really enjoy the courgette soup I usually make, but this recipe was a bit different as it was thickened with egg.
It was lovely.

DH has made two large batches of his famous tomato soup so far this year. There are more tomatoes to harvest so I will freeze that batch of soup.
We are having casserole tonight, which signifies autumnal weather to me.

It felt sufficiently autumnal yesterday - grey and wet - for me to dig out some frozen ham stock and make a big batch of thick, main-meal soup, to use up some of a mass of veggies. Ate some, some in the freezer.

Today I was going to do similar with some chicken stock out of the freezer, but it’s sunny!
Will still do it, though, since the stock is now thawed.
Anyone else feeling autumnally soupful lately?
