Another question about biscuits

As mentioned on the other thread about biscuits I am trying out biscuit recipes. I am trying to find a recipe for a creme filling to sandwich them together like custard creams.

All the recipes I have found to date, apart from just using jam, are with cream or butter and I want to be able to keep the sandwiched biscuits in my nice big "cookie jar".

I think to make a firmer creme it would need to have a very high proportion of icing sugar.

Any ideas?

That's brilliant - thank you! The secret is custard powder. It seems odd that it doesn't get cooked. I'll let you know if it works.

I made some with the Tesco recipe during lockdown last Spring. In a fit of boredom, I was looking for something different to bake with ingredients that I didn't need to go shopping for. From memory, I think they were ok but maybe a little too sweet for my taste.

I have used a simple buttercream filling in the past.

I used Nuttella and peanut butter,not tohether though.
Lemon curd would work too,but not a cheap jar.
