The lamb shank with roast veg that I did not feel like cooking yesterday ! With a home made apple sauce cake for dessert, possibly warm with custard or simply a slice of cold cake, freshly made today.

New recipe tonight - Mexican Chicken with Rice. Found it on a slimming world recipes blog, and thought it sounded interesting.

Husband and son will have the remainder of yesterday's fruit crumble and some custard or cream if they want pudding.

Roast chicken, served with roasties (natch) and cauliflower and broccoli in a cheese sauce.

I then get a chicken sandwich for lunch in a couple of days, and scavenge the carcass to provide meat for a chicken provençale, which includes onions, garlic, peppers, mushrooms and courgette. That then gives me three or four decent meals, and can be served with rice, pasta or baked pots. One has to look after the inner man!

Quite a substantial salad and as I did extra mash on top of roasts yesterday I saved it, added onion and salad cream and mixed it all up for potato salad. Red salmon ( don't like pink ) tinned, and a sliced hard-boiled egg. Home-made salad dressing. That'll do me grin Bread and butter and a cup of tea.

Just made some meatballs in tomato sauce. Used up loads of tired old veg which made me feel virtuous. Hopefully it will all taste ok. We’ll have it with pasta.

Stir fry, noodles with chinese spiced duck breast, home made spring rolls.
While I was rummaging in the freezer for the duck breasts I and came across a pack of chicken thighs that need using so while I had all the spices etc out I also made up a ginger/soy/chilli and garlic marinade for them. They can be eaten cold tomorrow if not needed for tonight.
