This a family favorite: Glazed Lemon Cake (No butter .... One bowl!)
Line an 8x8 pan with parchment paper or tin foil. In a large glass bowl, add:
1 c flour
3/4 c sugar
1/4 t salt
1/4 t baking soda
2 eggs
1/4 c. Plain yogurt
1/2 t lemon extract
3 T oil
2 T lemon juice
1 T lemon zest
Blend all ingredients until moistened. Pour into pan. Bake at 350 degrees for 20 minutes. Cool on rack for 10 minutes, remove from pan, and paper or foil. Use a wooden skewer to poke holes all over. Drizzle glaze into holes and all over top.
Glaze:
Whisk together 1 cup confectioners sugar, 2 -4 T lemon juice, zest of 1 lemon or to desired amount. Enjoy!
