Here is one many will know for lemonade scones
I cup lemonade
1 cup cream
3 cups sr flour.
Mix up and don’t maul too much. Use extra four on hands and rolling pin. Roll out to at least half inch thickness and cut into scones using a tumbler. Can wipe tops with cream remnants. Cook quite hot for 15 mins 200 C
Another one for pizza bases.
1 cup Greek yoghurt
1 cup SR flour. That’s it! Cook hot like scones after you have loaded it up with tomato purée, cheese and whatever you want.

My easy meal is chicken and mushroom pie -
A pkt ready made pastry
Small packet of button mushrooms
Tin of Campbells condensed mushroom soup
Leftover cooked chicken
Brown mushrooms is a nonstick pan with a little oil
Mix with chicken and the mushroom soup (undiluted)
Line pie dish and put in filling and make a lid
Brush with egg or milk
Bake in moderate oven until nicely browned.

Actually Doodledog that sounds a nice way to use up lots of odds and ends and would make a nice filling for what the Americans call 'hand pies' (I think), which are basically flat pasties. A bit like small Greggs pasties.

My very lazy meal when I am really down but need to eat, open freezer door, take out M&S ready meal, put in microwave,eat and enjoy.

Seriously though folks I have enjoyed reading these suggestions and have noted down several I know I will cook.
Some have been very inspirational.

1 tin tuna, drained and flaked
1 tin Campbells condensed mushroom soup - do not dilute

Warm them together, while cooking enough pasta for 2.
Mix all together, serve with frozen peas.
My go-to really lazy dinner, and very tasty. Loads for 2, would do for 3 small eaters.

Glad this thread was resurrected. I was looking for the lemonade scones recipe recently. And am looking forward to simple cooking after the Christmas cooking marathon (which I enjoyed, bit enough is enough)

add a onion to pan lightly fry sometimes add red pepper Tin o fcondensed chicken soupmake as instruction I use milk not water and left over chicken or chicken and gammon from weekend roasts to make a quick pie always have puff pastry in freezer pastry is cooking in oven while you are cooking the filling. filling freezes really well I sometimes cook extra chicken just to make this and have as a quick standby great on jacket potato or wit pasta or rice.

Easy cheese straws -

Put equal quantities of plain flour, grated mature cheddar and cooking marg (or butter) in a bowl. Mix together to form a dough. Roll out on floured board with floured pin. Cut into fingers and bake at, oh, I don’t know, gas 6 (no idea what the electric equivalent is, sorry) for about 20 mins or until faintly brown. Cool and eat! Oh, almost forgot, sometimes, if I remember, I add a good pinch of dry mustard powder or a dollop of ready made to the mix.

What a great thread! I'm really fed up with recipes that need a pageful of ingredients, most of which I don't have, but these are brilliant.

I don't think it matters. I use Elmea double light.

Oooh be careful there. Elmlea isn’t cream so you might get a different result using real cream fevertree.

I have used the pizza base recipe in the past but with a spoonful of sugar to make naan bread.

Gammon mushroom pie

Chopped up leftover gammon
Onion chopped very fine
Mushrooms sliced
Tin mushroom soup condensed variety
Put all ingredients in casserole then top with thin sliced potatoes and butter. Bake until potatoes are browned and bubbling.

Steak Casserole with Jacket potatoes

450 gm lean braising steak in steaks if possible
1 med onion thinly sliced
1 tin Baxter's Royal Game Soup.

Open tin, pour into casserole, add meat and onions. Put in oven 180 fan

Put jacket potatoes on top shelf

Ready in 1hr 30 mins.

I usually serve with some veg or other.

CHOCOLATE FRIDGE BARS
(Double up to make more - they are delish!)
Ingredients
110 g margarine
110 g (120 ml) sugar
50 ml cocoa
75 ml milk powder or cheapie coffee creamer
1 egg, whisked
1 (200 g) packet tea biscuits, crushed (Marie Biscuits for South Africans)
Method
1.Heat margarine & sugar until margarine is melted.
2.Add cocoa and stir in well.
3.Add in milk powder & stir.
4.Add in egg.
5.Add crushed biscuits, mix well & press into pan.
6.Chill in fridge.
(Crushed biscuits can be as fine as you wish - I do it to fine crumbs/powder, others like to leave it slightly chuncky-ish)

Re the pizza base, do you bake it before loading it up with tomato puree etc? Can't imagine it would work, if not. But then, I'm a useless cook. grin I would really like to know, though.

No, I'm not interested in healthy eating this week. It's Christmas, my birthday and NYE, it's raining outside and the land is beset by Plague.

I am starting a diet in January, but even then an occasional turkey and ham pie won't be my undoing if I have it with salad instead of chips. This week, however, anything goes grin.

It's really flavoursome Forsythia and uses up all sorts of odds and ends in the fridge (red peppers, peas etc). But don't be tempted to use low fat mayo instead; it separates when cooking and looks awful!

I have just chopped up leftover turkey, ham, and pigs in blankets, and fried them up with finely chopped onion, sprinkled a bit of flour over it all, and added milk, seasoning and a bit of tarragon. When it thickened, I put in the last of the cranberry sauce and half a tin of sweetcorn.

Whilst this was cooking I knocked up some pastry, and when it has all cooled and the pastry has chilled (it is in the fridge wrapped in clingfilm) I will make Christmas pies for the freezer. My husband is vegetarian, so I will make little ones for me to grab for a quick lunch when he is out.

To use up the last of that never ending turkey:
Break up the turkey meat into bite size pieces and Chuck in a large bowl. Add a few chopped spring onions, chopped celery, sweet corn and any other bits of veg in the fridge. Stir in a dollop of full fat mayo and seasoning and give it a good stir through. Tip into a shallow oven dish and scatter any bits of left over cheeses. Break up some crisps and scatter over the top. Shove in the oven and bake for 30 minutes. Serve with green salad.

(I just gave up after a few pages - as it's pretty useless for vegan recipes - except the soup and marmalade - but will try the fruit cake with almond chocolate milk!)
