When the recipe says 1kg of plums, does that mean 1kg of plums after being stoned or 1kg of plums before being stoned?

It’s not really important. I usually put more plums than the recipe, up to 20% or so anyway - so it includes the stones.
I also skim the stones off just before potting, much easier.

I weigh out whole plums and base sugar content what my scales show. I then go through the tedious task of spooning out the stones prior to potting.
I have on occasions added a small amount of boiling water to the rescued plum stones 'waste not want not' a slogan of WW11 rationing days, which then goes into the bubbling plum jam before potting.
