Bosh ultimate nut roast is yummy we serve with sherry ( and mushroom!) sauce.

I agree with your daughter, friends always did something to mushrooms in the early days! I'm on my own this year, I'm going to make myself a huge thai green curry with paneer.

I used to use a recipe for chestnut stuffing cooked in a loaf tin. A slice was very acceptable to me as an alternative to turkey with the rest of the more usual Christmas meal and others could have it as an extra if they wanted it. Must look it out again.

In the freezer, I have a butternut squash/red onion galette (pie) from Cook, but I always stock up on Taifun smoked tofu with almonds and sesame seeds - easy, just slice - and everyone likes it.

Stuffed squash is lovely - you make a sort of pilaf / risotto with rice / bulgur wheat, and whatever vegetables & spices you like; bake the half squash (or whole small squash) and pile it in, with pomegranate seeds to add a lovely sparkle. Keeps warm for ages.

Get one of those Turks head squashes, they come in a variety of sizes, slice the top off , scoop the inside out and then fill with a stuffing of your choice, nut roast, add cranburies to it, vegetarian haggis, herby apricot stuffing, anything you fancy, then put the lid back on and bake in the oven for 45 minutes - one hour.

Present it on a plate surrounded with greenery, it should look fabulous. You then take the lid off to scoop out the roast or stuffing mix to serve.

Can anyone suggest a tried and tested vegan main course for Christmas Day?
My daughter is vegan and not keen on mushrooms. Last year I bought the most awful meal from Waitrose, expensive and which turned out to be basically a huge beetroot wrapped in pastry Yuck! So this year I could do with suggestions which aren't to faffy and don't involve mushrooms. Any help much appreciated . x
