Cashew nuts

I have a large bag of cashew nuts bought recently from Waitrose. The taste is bland and the texture a bit rubbery. Can I liven them up by roasting with some spices not salt or sugar for health reasons?

You could try mixing them with some dried fruit, ie raisins or sultanas. Another option might be to add them to a stir fry. Enjoy.

I’d sprinkle them with freshly ground black pepper and dry roast them in a heavy bottomed frying pan shaking often.

I shallow fry them, and add a light sprinkle of mild chilli powder …

Cashew nut with chick pea curry is nice , adding coconut milk to the sauce gives it a Sri Lankan flavour. When soaked for about an hour cashew nuts go soft and you can whizz them into a smoothie or use as cashew nut milk, Roasting in a little chilli oil will give them a crunch for snacking. Last resort - put them on the bird table, wildlife will love them.

Thank you all DH will like them roasted with chilli. No birds at all in the garden now.

What would a tiny drizzle of runny honey in addition to the chilli oil do to the taste before roasting? They might need a bit of sweetness too.

They are amazing in stirfry dishes and vegan curries. I like to dry roast without anything added.

I love cashews and buy the raw ones. I roast them in the oven for a few minutes until they take on some colour. Leave them to cool and then candy them or make a caramel and mix them in then spread out on a baking sheet until cold. Home made nut brittle is the best.

I also use them in curries and salads.

Use them instead of pine nuts to make pesto...
