Vegan Curry

Gransnet has a recipe for vegan curry which has a list of nearly 30 ingredients. Personally I use a can of chickpeas, can of tomatoes, a vegetable of some sort eg. mushrooms, and a curry pot. I would use a can of coconut milk if I had some but its optional. Plus rice to serve. Simples.

Obviously you can grind and mix your own selection of spices, and use dried pulses soaked overnight and cooked.

Can you give me in detailed ingredients for vegan curry recipe?

I cook this curry every week for our local feeding the 'homeless' (I hate that word!) group. I've made it super quick, taking every short cut as I have arthritic hands. No quantities given, as I just wing it.

Chop an onion (I do it in a food processor), heat oil in large saucepan, fry onion. Add curry powder, stir to mix in, add cornflour, stir in.
Garlic, fresh ginger, some chilli if the curry powder is mild, in the food processor (no need to wash it after the onion!) with some water, whizz until smooth. Add to pan (from here ATP), use more water to rinse processor, ATP.
ATP some plant milk, coconut milk/cream (tinned or bar of), stock cubes or marmite. ATP red lentils, bring to boil, simmer till lentils done (make sure nothing is sticking on the bottom of the pan!). ATP frozen or fresh vegetables (I use carrots, cauli, broccoli, peas, spinach, green beans, parsnips etc.), tinned beans/chickpeas, salt and pepper.
Simmer till all cooked (takes longer with fresh veg).

This is my favourite chickpea curry. I often make it. It is very versatile since you can add any ingredients that you want. I've made it with butternut squash, sweet potato, and chicken.
I'd rather add the spices myself, as you can adjust them to your own taste rather than using a jar of sauce or a curry pot.

Here in the NE we jave a company that makes curry sauves and sells them in the local delis, they are superb and make the meal taste like a top restaurant meal. I make vegetable curry for DD but we all eat it. Life is too short to make curry sauce from scratch.

I use Patak's Paste Pots
Sometimes with coconut milk.

The Schwartz sachet of Bombay Potato mix is good too, but I haven't tried it with other vegetables, although I'm sure it would work.

I’m happy to use whatever shortcuts there are. Why use a lot of specialist ingredients if you don’t have to? It’s still a recipe.

I'm always looking for simple stuff to make, because I've one meat eater and me, and I prefer not to.
I'm bowed if I want to cook 2 complicated things a day.

I use Mr Patek. I prefer korma but they do hotter versions. There's no compulsion if people prefer to make from scratch!

Recipes are about using ingredients, not just a can of this and that, and a bought curry pot.

A shop bought curry mix would contain about 20 ingredients!
