Hello! Do you know any vegetarian or vegan recipes?

My mum's lentil soup. SOUPER healthy.

Tin of chopped tomatos
Couple of onions
Some celery
Cheap red split lentils

Chuck in a pan, with a slosh of water. Cook.

While cooking add paprika, cumin and curry powder to taste. I don't have any measurements.

A quick Google search should do it. Still, it's easy to convert many of your favourite meat recipes to veggie, simply by substituting.

For instance, a can of green lentils will replace mince in a cottage pie, quorn or tofu chunks are good instead of chicken in soups and pies. Chick peas are lovely in a curry and the liquid from the can is an excellent substitute for egg white.

I have given up using cook books. All I need to know for any possible recipe is on the internet. Google whatever you fancy!

I have an easy store cupboard recipe I made myself. Veggie chilli and rice/pasta

Tin of red kidney beans (if you can get the ones in chilli sauce all the better)
Tin of ratatouille
Tin of chopped toms(if you can get the ones with garlic etc all the better)
Chopped onion
Add any other ingredients you fancy like chopped peppers etc
Chiili powder
Salt and pepper to taste
Stock cubes to taste
Splash soy sauce.

Fry chopped onion with chilli powder, add ratatouille, toms, red kidney beans and whatever else you fancy chopped. Stock cubes, s and p, soy sauce. Transfer to casserole dish with lid and cook in microwave for about 20 mins or more this reduces the stock and makes it yummy in my opinion. Serve with rice or if you have left overs serve with pasta next day.

I do a vegan ‘chilli’ with a good handful of red lentils, simmered with tinned toms, sautéed onions, etc, until the lentils break down, before adding the kidney beans.
Plenty of chilli powder plus paprika, of course.

Another no-meat one I do is a macaroni/cauliflower cheese combo. Plenty of very cheesy sauce with a dollop of English mustard added, breadcrumbs and extra grated cheese on top, whack under the grill to brown. Always goes down well.

Surely cheese and eggs are not vegan. Even honey isn’t vegan. If you are cooking for someone who is strictly vegan you need to be extremely careful about things like stock cubes and Worcester sauce. Vegetarian and vegan are two very different categories.

You can create many veggie recipes based on meatless sauces for pasta. Also veggies with a crumble topping. Soufflees.
Even pies.
Just a combination of a carbohydrate or legume with veggies.
I love lenils, split peas etc but they churn up my bowels etc.

I love mushroom stroganoff, fry onion ,garlic together.
Add paprika dash of Worcestershire sauce.
Add sliced mushrooms
Mix Nat Greek yogurt and Philadelphia cream cheese (approx 25g of each per portion)
Stir together
Add a little bit of vegetable stock (made from a cube) if mix is too dry.
Serve with Boiled rice

Choped onions chopped mushrooms, chopped chilli pepper handful of Tofu handful of quorn mince (optional) any other chopped veg or herbs ( ring the changes) all in together with a little olive oil gently fry add and flavour you fancy throw in a few noodles or rice Eat as much as you want
Add to it the next day varying the flavours never ending Stir fry
