Using frozen lemon zest in cakes

I haven't, but I too would be interested to hear about it.

I love lemon cake and would think frozen lemon zest works perfectly well. Go for it! Then we'll all be round to sample some...

Where do you buy frozen lemon zest? I would think it's OK and well worth keeping in stock.

I'm trying to find some but so far only found dried and keep getting distracted because I am also looking for Green Onion Powder.

I haven't heard of frozen. My eyesight is good - but I'm lazy, so I get my granddaughter to zest lemons and oranges, then mix with caster sugar and put in jars for me. (She loves little jobs like that, using the zester, peeler, apple corer etc.)

I don't think it's lazy Hetty - just very well organised. Sadly no available granddaughter in this house

I haven’t seen frozen lemon peel but our shops are limited. If I could get it I would dry it off with kitchen roll before using it.

I’ve seen it in Tesco’s, Kittylester. Hetty58, how long does the zest keep mixed with sugar? I hadn’t thought of getting my granddaughter to do it, that would solve my problem and help to keep her occupied, always a good thing.
