Pork Goulash Left-Over Sauce.

Did pork goulash in slow cooker yesterday. It was good, but had a lot of sauce remaining- enough to fill a 1 litre tub.

Any ideas for using it up? It consists of stock, tomato purée, herbs, paprika, sour cream.

Pasta etc, but anything else?

Oh, and home made tomato pasta sauce in it as well.

Ooh, that sounds lovely!

Definitely pasta, or you could freeze it in single portions and use it with leftover meat when you have it (it would be good with chicken, I think).

You could make a (sort of) veggie meal with roasted veg (eg aubergine, courgettes, peppers) and some cooked chickpeas and serve with rice. You could cook that from scratch, or buy a bag of frozen Mediterranean vegetables (Tesco and Sainsburys both do them and they are great as standbyes) and canned chickpeas for a quick midweek meal with basmati rice or potatoes. Before anyone pounces, if the pork was cooked in the sauce you couldn’t feed it to vegetarians, but it would still make a lovely lunch for omnivores.

Stir in cooked meatballs, or pour over sausages?

Depending on how many in your household a litre is a lot of sauce - I would freeze into a few portions and keep until the need arises!

How about turkey meatballs cooked in your delicious sauce with pasta or mashed potatoes.

Thanks for all these great suggestions.

I make my own meatballs, usually cook with some home made pasta sauce, but shall use up some of this sauce next time, and then try other alternatives.
