I put mushrooms in everything! Especially with covid in the air, I've been using mushrooms everyday because they are high in vitamin D and that's meant to protect your immunity.

Nice in curry, bolognese, soups, stirfries and everything... yum yum yum

Anyway, we haven't had covid to my knowledge, despite taking tests every week.

I make a mushroom flan. I lightly cook chopped onion and sliced mushroom in a saucepan with a little oil. When it's cooled a bit I add ginger (usually powder) and a bit of salt and pepper as required. Then I mix in a small tub of natural yoghurt (the original recipe said cream) and an egg. I put this in a pastry case and cook it until the mushroom mixture is golden to mid-brown.

We eat a lot of mushrooms but I wouldn't chance wild ones unless I was sure of what they are!

We haven't eaten mushrooms for years. if ever.
Husband says they're fungi , so are harmful.
But I remember that they're tasty if cooked gently and have been using them lately. On toast for supper.
He won't participate.
Do you have any good recipes?
