Chorizo Sausage

There us just me you cook for and on a whim I bought a whole chorizo sausage, the sell by date is almost up and I don't know what to do with it so I thought about freezing it in portions òr cooking the whole lot and then freezing. looking on the internet there is conflicting advice, some say yes the others no. I have the thought of just binning it. Can anyone help? Also a recipe please so at least I can use a bit if it.

I would slice it then freeze on a tray before putting in a freezer bag.

My favourite recipe is very easy, par boil waxy potatoes, sauté an onion add potatoes then chorizo, season to taste.

I completely forgot I had posted before I got Covid,sorry about that and I have read through all the suggestions. I have had it so long it's probably inedible.
